Our Story

Frisch’s began in 1948 as Carrick Poultry, founded by Albert Bolz, father of RoseMarie (Bolz) Frisch. In 1958, RoseMarie’s husband, Jack Frisch, purchased the business and began shaping what would become a true family legacy.

In 1963, as broasted chicken was introduced to the industry, Jack created the recipe that would become his famous broasted chicken - a signature item that remains a customer favorite to this day. At the time, the business was still known as Carrick Poultry, built on a foundation of fresh poultry, fresh seafood, and quality broasted chicken.

As the business grew, so did the vision. In the late 1960s, Chicken Derby opened in Baldwin Courts as part of that expansion. By 1976, the original Caste Village Carrick Poultry location opened, and Dennis Frisch began his career in the family business. Around this time, the menu expanded to include pizza, hoagies, and a full deli featuring the finest meats and cheeses.

Continued growth led to another major milestone in 1991, when the business moved across the parking lot into the former A&P Grocery Store location in Caste Village. This move marked a new chapter. With expanded space came a full-service restaurant, deli, banquet room, and catering kitchen. The aroma of fresh, homemade soup quickly became a hallmark of the new location.

Sherry Frisch, Dennis’ wife, grew the catering operation into the trusted service it is today - handling events of every size with care and attention to detail. Supported by a dedicated team of long-term employees and family members, the Frisch family has remained committed to making every event easy, memorable, and worry-free.

With three generations working side by side, one final change felt natural: Carrick Poultry became simply Frisch’s.
